Reimagining Indigenous African Ingredients

Chocolatier: “Madam, that’s not how we make in Ghana."

Me: "I know. And, that’s why I’m changing it.”

I love taking indigenous African ingredients and reimagining its potential.

For example, moringa is a West African spice often used in soup. This spice is a superfood full of nutrients and known for its medicinal qualities.

I often think to myself, "How might I take an indigenous African ingredient and make it relevant?"

This inspired me to create the Kukua Truffle, a white chocolate ganache covered in moringa powder.

I named the truffle, Kukua, after girls in certain Ghanaian communities who were born on Wednesday.

I won a Chocolate Alliance Silver Award in 2021 for this truffle.

I'm intentional with my cuisine.

  • Each signature truffle is named after an African woman who has inspired me

  • And, Midunu Chocolates are made with love by an all-female team of chocolatiers in Ghana to ensure upward mobility for women in the industry

I love playing at the crossroads where culture, community and cuisine intersect with environment, sustainability and economy.

In doing so, I uphold the love letter I wrote to Africa - a commitment to celebrate and preserve African culinary heritage and indigenous ingredients.
